Looking for a good Tog recipe, first time I ever caught a taug and I hear their GREAT so if anyone has a good recipe please share.

Check the Resources link at the top of the page. There is a Recipe page with 3 recipes for Blackfish. Personally I like mine blackened.

We made this last night it was one prob the best fish dish I have ever eaten.The sauce is incredible.
Just substitute the triggerfish ingredients with Tog(very simular texture and cooking rate). This is a great recipe that I found online. It originates from my brother's area on the panhandle in Florida. There are numerous recipes out there to try. Tautog is a great fish to work with.

Ingredients:
2 ounces clarified butter
7-8 ounces Triggerfish portions
Salt, to taste
Pepper, to taste
2 ounces white wine
1 shallot, minced
1/2 fresh lemon
1 teaspoon capers
1 ounce jumbo lump crab
2 ounces butter, softened
Pinch fresh parsley, chopped
Instructions:
"This dish has a great combination of texture and flavor."
Heat a saute pan. Add enough clarified butter to coat the bottom of the pan. Liberally season fish with salt and pepper. Place fish in pan and saute on its side until golden brown. Flip fish over and saute until cooked thoroughly. Remove from pan. Deglaze pan with white wine. Add shallots and reduce until almost dry. Squeeze lemon into mixture. Add capers and crab. Carefully whisk in softened butter. Add parsley last. Ladle this sauce over the fish. Serve this dish with polenta.

I made tog scampi the other night, and wow.
1.Melt 1 stick of butter in a skillet
2.Add fresh squeezed lemon juice (half lemon)
3.Mash and finely dice two cloves of garlic add to lemon and butter
4.Chop 1/4 cup scallons add to butter and lemon
5.Sprinkle a few flakes of parsley
6.Bring to a slow simmer.
(you can add white wine, but i find it makes the sauce too tart)
7.Place tog fillets in baking dish or pan,
8.Add scampi sauce to baking pan, be sure to hit all areas of the fillets including the undersides.
9.Slice half a lemon and place slices ontop of tog fillets
10.Add cracked black pepper as desired
11.Bake fillets on 350 for 25-30minutes, basting the fillets occasionally.
12.place fillet over a side of pasta and you have the best tog recipe there is!

Tog scampi is great but I do like a little wine in it and crushed red pepper flakes for a little heat. Blackened is good too.

Like the looks of that scampi recipe - any thoughts on how that might work with other white-fish [striper,flounder,weaks,etc.]
Tog with crispy potatoes.
Serves 4
Butter for greasing the baking dish
6 medium boiling potatoes (red skinned or yukon gold)
2 garlic cloves
1/4 cup olive oil
Salt and black pepper
1 Tbsp lemon juice
3 Tbsp chopped parsley, plus more for garnish
1 1/2 Lb Tog fillet
Set the racks in the bottom third and middle positions of your oven. Preheat to 425F.
Heavily butter a large shallow baking dish (about 10" x 16").
Peel potatoes and slice into very thin (1/8" thick circles) using an adjustable blade slicer.
Adjust the slicer to the thinnest possible setting and slice the garlic paper thin.
Season potatoes generously with salt and pepper and mix with half of sliced garlic, 3 Tbsp olive oil (reserving 1 Tbsp oil for the fish). Spread evenly in the baking dish in a single overlapping layer. Bake in the bottom third of the oven for 15 minutes or until potatoes are almost tender and starting to crisp around the edges of the dish.
Season Tog with salt and pepper on both sides.
Mix the remaining garlic, 1 Tbsp oil, lemon juice, and parsley. Pour over Tog.
When potatoes are almost tender, place the Tog on top and bake in the middle of the oven until the fish is opaque in the center, but still juicy, 10 minutes per inch of thickness.
Sprinkle with remaining parsley and serve.
Enjoy.

weakfish not so much. striper definatly, flounder may flake too much
Tog scampi is by far my favorite fish dish of all time.

I cooked the Tog Scampi last night for dinner and it was the amazing. My only problem was I had to subsitute the onions for scallons becasue I didn't have any. But it was tasty!!!!!!! I know striper would be awesome in that recipe.

This recipe is great with anything, however when I used Tog it was out of this world. It makes quite a bit of batter so I’d suggest you cut everything in half.
Recipe: Fried Fish With Vodka and Beer Batter
1 1/2 pounds (about 4 large fillets)
Salt and freshly ground black pepper
1 1/4 cups white rice flour; more for dusting
2 to 3 quarts vegetable oil for deep-frying
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups vodka
1 1/4 cups lager beer.
Rinse fish fillets, and dry with paper towels. Season well with salt and pepper, and dust with rice flour, shaking off any extra. Set aside
Place a wide, deep pan over medium heat. Add oil to a depth of at least 1 1/2 inches, and bring to 375 degrees on a deep-fry thermometer. In a medium bowl, mix together the all-purpose flour, 1 1/4 cups rice flour, baking powder and salt. Slowly stir in the vodka and beer to make a batter. (Don’t make batter ahead of time, or the bubbles from the lager will be lost.)
Dip one fillet into batter to coat it completely, and lower into hot oil. Repeat with other fillets. When undersides of fillets are golden brown, after 1 or 2 minutes, turn, and brown other sides, a minute or two. Lift from oil, drain and serve.
4 servings.

I make Tog Tacos cook the tog however you like and mix with a little cheese shredded cabbage hat sauce and even a liitel sour cream. The cabbage is the ticket. Roll it up in a tortilla and your golden.

I Use This One For Tog,seabass Etc. Coat Fillet's With Mayo. In A Large Bowl Add Instant Mashed Potato Flakes,salt,pepper,parsley And Any Other Spices You Like Then Coat Both Sides Of Fillet With The Mixture And Throw Them In Frying Pan With Some Hot Butter Cook A Couple Minutes Per Side. Very Good And Quick:d

clean and fillet the fish.
make a tin foil pouch, put the tog in the pouch. seal the pouch and place on fire pit. cook about 15-20 minutes on medium heat.
open pouch and enjoy!!:D
