Just cooked up some fresh striper tonight and it was GREAT! Coated the foil with olive oil, and added italian dressing...then baked at 350 for 15 minutes. It was GOOD!

Any other simple recipes I should be trying???

striper steaks pan sauted in butter or marg. sprinkle with old bay.at the last minute of cooking add 2 table spoons or so of minced garlic(outta jar is fine)and some dried chives.add a splash of water to loosen goodies up if needed.simmer 30 secs.plate up pour pan contents over fish.its a heart stopper but its TASTY.serve with minute rice and apple sauce.YUM YUM:D

I had flounder.....store bought. 11.99 pound.

It was my fault I carved up some croaker fordinner and the wife didnt see i got side tracked and never scaled or skinned them....so went to acme. unfortunetly so did the wife not knowing i did. Oh well lots of flounder this week. I need me some striper.

Anytime you have extra you cant eat ill bring the beer LOL

Heres one my Mother In Law got out of a Maine cookbook:
Cut fillets into 2-3" pieces.
Dip in egg and then Bisquick.
Fry in olive oil......
MMM-MMM-MMMMM!!!!!!

I sauté' the striper in olive oil & garlic very hot pan both sides for less than a minute. put in a baking pan with Parmesan,provolone & mozzarella cheese cover with tomato gravy bake for about 10 to 15 min @ 325 (depends on the thickness of the fish)

heres my "go to" recipe for striper. it may be a little advanced for some, but it will really give you some happy dinner guests. if anyone want me to send you a real recipe for this let me know, this was put together real quick.

"pan seared striper with garlic rapini, grilled corn/black bean salsa, bacon and clam jus"

-blanch rapini in salted water, saute up shaved garlic slicec in pan until brown in the best evo you can find and add rapini and more evo salt pepper and chili flakes.
-whip up some garlic mash,
-grill fresh corn over mesquite wood chips, slice corn off cob and add to black beans red peepper dice cilantro red onion dice and chopped scallions and julliened sundried tomatoes.
-cook off some littleneck clams in garlic and onions and wine when open pull meat away from shell and throw shells back in pot and add water/ckicken stock to make a clam jus.
-dice slab bacon into small cubes, if no slab available use smoked bacon.
-salt an pepper both sides of striper and sear in evo skin side down until crisp, flip and sear meat side, baste with unsalted butter until cooked through(m) and pull from pan then add your bacon and saute till crispy add diced shallots and clam jus, then clams, reduce then add a lot of whole butter, salt and pepper, chili flakes.
-place dollop of mash on plate, pile of rapini on top, then fish, then sauce with clams and bacon around plate, and black bean/grilled corn salsa on top.

For a little snack, I like to cut it up into 1" chunks throw into a small ziplock bag with flour, seasoned salt, and garlic powder. Put some oil in a skillet and fry pieces a minute or two a side. Drain on some paper towels and sprinkle a little old bay on top. Good with cold beer in front of TV:D

I had Tog last night.....

Soaked in the egg / milk solution for an hour, then breaded with Italian crumbs, and pan fried in Extra Virgin Olive Oil with garlic.
Served with home made mac & cheese, and sauted broccoli with garlic....:bow:

This is my all time favorite, unbelievable taste and easy as hell:


Place fillets in baking dish

Spread thin amount of mayo on each fillet

Cut 4-5 thin pieces of butter on fillets, just lay on top

Drizzle some lemon juice on top

Sprinkle: Salt, pepper and Paprika (this is key)

Lay a bunch of fresh onion on top (or alittle whateveryou like)

Bake in pre-heated oven 375 for 15 minutes.

marinate in balsamic vinegar, orange & lemon juices with salt, pepper, garlic, oregano, & some honey for a couple hours. Bread them with pecan/honey crusting and fry them up in olive oil....i like mine darker on the outside, but cook them to suit your taste, my mom also will use potato chips for breading from time to time, that is good too.

Two eggs beaten, dredge steaks through egg, coat with bread crumbs, place steaks in hot oil (iron pan is best)and brown on both sides, place in over at 350f for 15 minutes, season to taste and eat.

Wrapp the fillet in aluminum foil & spice as desired....no pots to clean & it keeps all the liquid in....put the liquid on some pasta and your good to go.

Thanks for all the replies. Being diabetic I avoid bread crumbs, but man those ideas sound delicious!

Works well with big blues. No oily taste at all.
