I was reading in a earlier thread that they were trolling Stretch 25s in 25 feet of water, 150 ft. back at 3.1 knots. Were these dragging the bottom? How about if they ran them at 2.5 knots, would there be a difference in depth.

Some of my best striper fishing is coming over a shoal, and yep, they're bumping bottom. (I set the drags just tight enough to troll the Stretch's, the short duration, less intense click-click-click-click is bottom bumping.) How deep they really run will depend on diameter of line, line out, and speed, among other factors. I typically use 25-30 lb. mono, slow troll, bump main engine in and out of gear, or just use kicker. I've also used 12 oz. in-line sinkers tied on 10 ft. leader, ahead of a couple Stretches, both to get them a little deeper on a short line, and avoid tangles-works fine. (After you've dealt with a couple monofilamant basketballs, you get a lot more careful about separating the spread.-Stretch's go crazy when they tangle.) Good luck, go get 'em.
