For any of you guys that are still fishing, I have about a dzn. eels
that I'll give to you.
E-mail me @jonesmedsales@msn.com to pick up. I live in the Ocean City
area.:)

Dont give em away! Eels are good eats!

Cut off the heads and skin them in one motion...slice the head amost thru from top to bottom without cutting through the skin on the bottom, slice the skin along the bottom side of the eel from the head down to the tip of the tail, and use the head and the attached skin as a handle to rip the skin off the rest of the fish. Gut, and cut the cleaned eel into 2" long chunks. Rinse off the pieces in salted water, and dry with paper towels.

Salt, pepper and flour the pieces, and fry em in olive oil till golden.

Drain on paper towels, then put the cooked pieces into a bowl and cover with red wine vinegar, 1 dozen sliced garlic cloves, 1 small thinly sliced onion, salt, and red and black pepper.

Store in fridge for at least a couple of days before you try one. Serve cold or at room temp.
