Easy to do!
Need a ceramic crock plastic will work but not alumunum or metal.
Cut scale and wash herring in fresh water, layer in kosher salt untill crock is 2/3 full and refrigrate for 7 days, the crock will fill with brine from the salt drawing fluid from fish.

After 7 days dump brine and wash fish and re salt fish and refrigrate another 5 days or so there will be less brine formed this time and the fish will be salt cured.

Purchase pickleing spices at food store ie shoprite acme etc, boil spices and wash fish a final time cut fish to size and jar in hot pickle spice masom jar or similar let cool and refrigrate for about 7 days, there ready to eat!

For German stile remove from pickle spice and marinate in sour cream and cukecumber overnite in fridge and Bon Apitate!

Another method.
Scale and fillet your herring . Salt with kosher salt overnight and drain. Slice some raw onion rings and take a mason jar and fill it with the fillets and the onion rings .Top it off with a combination of 1 part white wine vinegar and 3 parts sourcream. Let sit in the fridge for at least 3 days or better yet a week. Enjoy.
