Thank God my wife loves this dish and thank God I can convince her I fish so much just to put food on the table for her. I have posted this recipe in the appropriate place.

Dr. Bass, what type of seasdoning do you use on your fish. I try to go light most of the time on the seasoning but occassionally I'll doctor it up. The picture makes me hungry.

Here's what I do.

Cut the striper pieces into 4in by 4in fillets.

Spray both sides with Canola Oil cooking spray. then sprinkle Chef Pauls Redfish Blackening seasoning.

Get grill as hot as you can. I have a grate with pea sized holes that is about 12in by 12in that I place right on top of the grill, it's great for fish fillets.

Grill fillet to taste, don't overcook.

Serve over bed of rice or mashed potatoes, the picture above is mashed.

The trick: melt about 4 tablespoons of butter right before you serve and pour ever fillet.

Add a vegetable or two and you got it.
