how can a restaurant serve a whole striped bass tableside with the size limit being what it is for striped bass? the reason i ask is because i have seen an advertisement for it and thought how can that be. just curious.

Its not the same as wild caught, but its not the terrible garbage many like to make it out to be. Since they're grown under controlled conditions for profit, and culled for size etc...they don't have the same flavor or texture. You won't get the big chunky flake you get from a big ole line caught beast. Texturally the flesh is finer, and you're typically going to see filets in the 6-8 ounce range. Ready-sized for the plate. Seared with the skin on, with a liberal sprinkle of kosher salt and fresh ground ppper...over ultra high heat in smoking hot oil so the skin gets nice and crisp...its not bad. Not the same, but not terrible either.
