Gut scall and degill.Soak in a mix of 3 parts water and 1 part vinager to whiten up any ecsess slime,scrub and rinse any white slime on fish.Brine for 6 hours in non iodized salt and water,smoke at 185 for 6 hours.Hang dont lay down,Serve with cream cheese and crackers.If you don`t eat the whole thing corn on the cob style.

Gut them once they are caught so they stay fresh and then leave them on the back steps for the cats. They love them.;)

I gut and clean them real nice. Tie them to a nice oak plank. Bake them for about 25 min. Take them out. Cut them loose. Throw the trout out and eat the PLANK.

smoke them had a batch that pop pop smoked and they were great.just smoked a bunch of seabass that i am eating right now.louis

Wrap it in seaweed and take a bite. To really inhance the flavor cook up some wild rice as a side dish. A great meal in only 30 minutes.
