I printed up Tom's recipe, went to the store and picked up the ingredients and went to work.
3 hours later a masterpiece was served to my family as an appetizer for Christmas Eve dinner. Absolutely no modifications were made and it turned out awesome. Thanks Tom!

Glad you enjoyed it Ronnie.
Happy New Year. You can substitute Drum fish as well- or use boat at the same time!!!

Blackened Drum (Chef Paul Seasoning) is simply awesome! It ranks a close second to pan seared sea bass with salt, pepper, butterm, and lemon.

I also made a big hit with that recipe Xmas Eve. In fact I was asked to bring it for the New Years Day feast for an encore. I did modify just a little. I subsituted clam juice for the chicken stock and sprinkled a little Old Bay in. (I love that Stuff) Thanks Tom!!!

Mickey...I have cooked drum by deep frying it as I would a flounder, and I have also grilled it like a steak with barbecue sauce. It is good either way....Gene

Funny thing- the original recipe did call for clam juice. Unfortunately, I hate clam juice, so I substituted chicken broth in it's place. Good call though. Glad you enjoyed it.
