Blackened Fish-Striper:
Filets of fish. Rinse Pat dry. Melt butter and dip the fish pieces to coat.
Using Paul Prudholme's Blackened Redfish Magic, coat buttered pieces to taste-I
prefer alot. Heat cast Iron frying pan really HOT(On High) for 15 minutes. Turn
on exhaust fan! Pan fry fish till coating golden/brown to black and fish is
cooked. Tuna steaks should be thick if you want Rare. I cut the striper filets
into 3-4" pieces. I try to use thick flounder filets as well. Enjoy. The recipe
