Barrells Striper Franchaise
Cut  striper fillets into similiar sized pieces so they all finish at the same
time. I like about 1x4 inch. Flour and set aside. Scramble 6 eggs and add 1 cup
of ground parmesean or pecorino romano cheese.(I  prefer the latter) Dip fish in
batter and fry in olive oil/butter until golden brown. Place fish on platter in
oven to keep warm.
  Sauce - In pan melt 1/2 stick butter with minced garlic ( I use alot) Cook
lightly and add 1 cup white wine,juice from 1 or two lemons,tabelspoon or more
of smallcapers (dont forget a little caper juice) reduce by 2/3rds. Turn off
heat and add 1/2 stick of cold butter and generous amount fresh chopped
Celantro. Pour over top of warm fish pieces and serve.
