Partnership's Baked Striper
To make Breadcrumb Filling:
2 cups breadcrumbs
1/4 cup green olives(pitted) chopped fine
1/4 cup black olives(pitted) chopped fine
olive oil
salt and pepper to taste
garlic powder to taste
1 Teaspoon dried Oregano
Combine all ingredients to make the filling.  Use enough good olive oil to make
the mixture nice and moist but not soaking wet.
Slice enough Idaho potatoes to cover the bottom of a baking dish. (Peel skin off
and cut potato in half.  Then make thin slices so you have half moon shaped
pieces)
Coat them lightly with olive oil
Next cover sliced potatoes with the breadcrumb filling
Next lay fish filets over breadcrumbs.
Cover fish with another layer of breadcrumb mixture.
Cover pan with aluminum foil and bake covered at 350 degrees for about 1 hour or
until potatoes are done.
Yum yum.
