Recipe:
PA DUTCH OYSTER CORN PIE
Large deep baking dish--4=6 quarts
1 to 1/1/2 dozen oysters
1 bag of OTC large hard round oyster crackers
1 can of whole kernel corn
3-4 tablespoons of butter
Black pepper to taste
1-2 teaspoons of parsley flakes
1-1&1/2 quarts of milk
1 pie crust
6-7 hard boiled eggs
Pam Spray or equal
Spray the bowl with Pam.
Crush crackers (nutcracker or crab cracker works well)
Add milk to soak crackers
Add corn (drain off first)
Add oysters including the juice (Check for shell pieces)
Dice eggs
Add pepper
Add Parsley flakes
Add butter
Stir, and if more milk is needed, add it.
Put pie crust over top of bowl (pierce crust)
Preheat oven to 350 degrees F.
Bake until crust is brown--about 1 to 1&1/4 hours
Remove from oven, set on a pot holder and dig in. We add additional milk into
our individual bowls at the table. When oysters are NOT in season, this is
still good as a simple corn pie.
