Recipe:

Skate ala Knotty:
1) start with a BIG skate (too much work to clean a small one and get no meat) I
would say somewhere around 18" wing tip to wing tip is a good start.
2) just cut the wings off the skate straight through because trying to fillet
off the carcass isn't too easy at this point.
3) to the kitchen to finish cleaning.... Boil some water and right next to the
stove have a bowl of ice water. Dip one fillet at a time into the boiling water
for a few second (your not trying to cook the meat) then directly into the ice
water. This will loosen the skin and can be peeled right off.
4) with a SHARP knife find the cartilage between the top and bottom of the wing
meat. and fillet the meat off the cartilage top and bottom.
5) now your ready to go how ever you want to make it. It resembles scallops in
flavor so that can give you an idea as to how to prepare it. I do mine several
ways...
Dredge the fillets in flour the into the frying pan.
Stuff with some crab filling and roll them up and a couple minutes under the
broiler.

sautéed in butter

Its all good!! but remember that your dealing with a thin piece of meat and you
can over cook it very quickly. just when the meat begins to turn white is
perfect to me. But I eat my beef still on the hoof so use your judgment.
