Sniper's Blackfish Scampi:
 2 Tog Fillets 1 pound each
 1/4 cup butter
 1/4 cup olive oil
 10 Ritz Crackers (Crushed)
 Lemon Juice
 6 minced Garlic Cloves
 Kosher Salt
 Chopped Parsley
 Heat the butter and olive oil together in a skillet at Medium Heat for 5
minutes. Add the minced garlic cloves. Put tog fillets in and sprinkle with some
kosher salt to taste. Cover for approximately 3-4 minutes. Turn the fish and put
the crushed Ritz cracker crumbs and parsley on top. Squirt enough lemon juice on
top to moisten the cracker crumbs. Cover and cook for 5 minutes. Remove from the
pan and add salt and pepper. Enjoy.
