Stuffed Striper Parm
Take a striper filet ( or any white fish) and cut into serving size. Then
butterfly the filet. For the tail end, just cut a little bigger so it can be
folded over.
In a separate bowl mix some pre-cooked crabmeat (or lobster, shrimp, scallops,
or a combo of the above) with a little mayo (just enough to hold together), a
pinch of crushed crakers, parsley, a pinch of garlic powder, salt & pepper.
Stuff the filet, put some olive oil on both sides of the filet, place in a
baking dish and bake until just done. once cooked, bathe each filet with warmed
tomato sauce, sprinkle on some mozzerella and back into the oven until the
cheese melts. Serve over pasta.
