is it possible, or have any of you guys fished eels off bridges? what would be the preffered method for that?

Very Possible and Productive...
Standard eel rig with in-line sinker system, drop it down and walk the rails back and forth very slowly up and down the bridge..

I agree with Steve. I've done it plenty of times. I liked working against the tide and letting the eel be taken under the bridge. I'd work from post to post. Then continue to the next posts. Use strong line, especially if you hook into a cow. It can be quite a struggle fighting the fish and the current, but its worth it.
