Tog filets are easy to de-bone. The bones are only in the lateral line from around the middle of the filet back. I usually cut the lateral line out giving me a V shaped back part of the filet, or on big ones, cut the lateral line out of the whole filet, giving me 2 filets, a big one from the top half of the fish, and a smaller one from the belly half.

if your talking abou the rib bones, when your filleting ...slide the knife across just under head as you would any fish then down to the spine and turn cutting down along back to tail.go back up to just below the rib then slide knife through fish and fillet it turn fillet away from fish and slide knife acroos the top of the rib,do not take the rib section with the fillet,Then do as Capt G said....easier to do than to explain......
