I hate Kahle hooks. I lost a couple big (double digit fish in '01) at the boat because the fish just held on and wasn't hooked. The bait, 5 inch mullet, reversed the point into its body so there was no way to get the hook set into the flounder.
I have switched to wide bend hooks made by Eagle Claw or Sea Striker. I use 1's for big baits, 2's for medium, sometimes slightly big baits, 4's for killies - small compared to pogies and mullet.
The right hook size means more bait action. This is bigger than most anglers give credit to! Ever see the guy with the giant J-hook and a tiny minnow.
I buy the hooks by the hundred. If a fish gut hooks, I snip it and tie on another and hope it rusts out or digests.
