12 juiced lemons and water, enough to put roast in deep bowl and cover with the liquid. Add a seasoning that you like, I use lemon pepper. Might want to add some red wine vinegar. Add a lot of Kosher salt, probally about 1/2 - 1 cup.

Let it soak for at least 12-24 hours
