Got back late yesterday afternoon from Long Island, NY. Had a message for Mike Grabbe who was heading out for some flounder fishing today. We hit the water at 9:30am and fished till 12:30pm in a couple of Mike's back water spots. We managed 8 keepers from 17" to 21", plus 4 shorts, not a bad 3 hours of fishing.
Thanks Mike for a fun 3 hours and great fishing back in NJ.
It's Flounder Fran chaise for dinner tonight.

Great job as usual.

Don't you guys miss working like the rest of us? :confused:

Mike, you have an excuse...school just let out for the summer.

Lew....fishing, eating and drinking isn't considered work. ;)

Mike-way to go dude. Looks like things have certainly heated up. Capt. Lew that looks like one heck of a dish. Send me the recipe if you don't mind. I have a bag of filets in the freezer that would make a nice dinner. Thanks Capt. Lew. Mike give me a call maybe we can hook up soon!

Here you go, enjoy.

Striper or Flounder Fran chaise (for two)

1 lb. striper fillets or flounder
3 eggs
½ cup Parmesan or Romano cheese
1 or 2 lemons
1 stick butter
1 cup white wine
¼ cup fresh chopped Cilantro or Parsley
Flour
Minced garlic or garlic power
Olive oil

Cut striper or flounder fillets into similar sized pieces so they all finish at the same time. (not necessary for the flonder) Flour and set aside.

Scramble 3 eggs and add ½ cup of ground Parmesan or pecorino Romano cheese.

Dip fish in batter and fry in olive oil until golden brown. You only need about a ¼ inch of olive oil for flounder, maybe a little more for striper.

Place fish on platter in oven to keep warm.

Sauce
In pan melt ½ stick butter with minced garlic or garlic power. ( to taste, I use allot)
Cook lightly and add 1 cup white wine, juice from 1 or two lemons reduce by 2/3rds.
Turn off heat and add ½ stick of cold butter and generous amount fresh chopped
cilantro or parsley.
Pour over top of warm fish pieces and serve. Yum Yum :D ;)
